Cooking with Christina: Lemon Chicken
Lemon Chicken & Rice🍋
One thing that always boosts my mood is a homemade meal made with love. I have always enjoyed cooking and this is one of my favorite dishes to make PLUS it is easy and relatively healthy. Cooking for myself is a form of self-care for me because I am actively fueling my body while also learning and trying new things.
Ingredients:
2 chicken breasts
1 large lemon
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp garlic salt
1 tsp italian seasoning
1 tsp lemon pepper
1 tbsp olive oil
1/4 cup lemon juice
1/2 white rice
Directions:
1. Trim any part of the chicken you are not a fan of - I usually cut off any extra fat
2. Preheat oven to 450F
3. Set a small pot with 2 cups of water on the stove to boil (for the rice)
4. Place chicken on an oiled baking sheet and rub seasonings in until evenly distributed
5. Cut four thin lemon slices and place them on each chicken breast
6. Squeeze lemon juice on each breast
7. Drizzle with olive oil and place in the oven for 15-18 minutes or until fully cooked through
8. After the chicken is done, put rice into a bowl, sprinkle with a pinch of salt and squeeze the rest of the lemon, and mix it all together
9. Place one chicken breast on top of the rice and ENJOY!
*** I also recommend adding capers (if you have any) to give it a bit more flavor - I did not have any at the time***
